We are Dr. Cow.
We're a small, environmentally conscious business, run by Veronica Schwartz and Pablo Castro. Veronica is an award winning pastry chef. Pablo has a degree in Business and has spent his life in the food industry developing products and doing food research and development. They live in Brooklyn with their daughter, Suy.
The vision that we have for Dr. Cow translates into the ingredients that we source to make the foods we love and want to offer you. We make food based on our standards of cleanliness and sustainability in the world and as fuel for our bodies. Our food is:
Raw. This means that we do not process any of the foods we prepare above 120 degrees Fahrenheit. Important nutrients and enzymes begin to break down around 120 degrees Fahrenheit and in support of their existence we choose not to take it that high. None of our ingredients have been high-heat process, chemically, physically refined or filtered.
Vegan. Dairy Free. Egg free. Gluten-Free. Soy-Free. All of our foods are plant based and none come from an animal’s body.
Organic. Non-GMO. Certified Organic is our standard for all ingredients entering our facility. We want to know everything about the food we are making, so we take the extra steps to learn about each ingredient we bring into our kitchen.
All of these key food philosophies help us maintain an environment for food creation and human interaction that sparkles cleanliness and clarity, even on our messiest days. We don’t have to worry about greasy surfaces and dangerous bacteria with raw animal products. Gluten and soy contamination are non-existent.
